Caramelized Onion Dip


I am adding something to my New Year's Goals list- organizing this blog! I am going through my (many) drafts that were started a long time ago, and either finishing them up or hitting the Delete button. It already feels great! So, here's one of those older posts that have just been waiting on me to hit the Publish button.

This is a yummy recipe that I tried a while back. I don't remember where I found it, but I didn't come up with it on my own. I am a big fan of french onion dip, and this is just about as close to it as you can get with a homemade onion dip.

Ingredients:
  • 2 tablespoons butter (calls for unsalted, but I used salted anyway)
  • 2 medium onions, thinly sliced (I recommended chopping them though)
  • salt & black pepper
  • One 8 oz. bar cream cheese, at room temp.
  • 1 cup sour cream
  • 2 tablespoons chopped fresh chives
  • chips, thick-cut veggie chips, for serving
Directions:

1. Melt the butter in a large skillet over medium-low heat. Add the onions and 1/2 teaspoon salt and cook, stirring occassionally, until deep golden brown, 30 to 35 minutes. Remove from heat and let cool.

2. In a medium bowl, mix together the onions, cream cheese, sour cream, chives, 1/4 teaspoon sal, and 1/8 teaspoon pepper. Serve with chips.

Use thick-cut chips or vegetable sticks, and you're good to go! Yum!!

  2. That looks delish! I love dips and they are so much better made from scratch.
    Good luck on your blog clean up. At least you have a bunch of drafts started. I kind of abandoned my blog the last few months:)
